Chinese Chicken Noodle Stir-Fry Recipe

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into thin strips
  • 2 cups of Asian-style noodles (like chow mein or lo mein)
  • 1 red bell pepper, sliced into thin strips
  • 2 carrots, julienned
  • 1 onion, finely sliced
  • 2 cloves garlic, finely chopped
  • 2 tablespoons of canola oil
  • Salt and freshly ground black pepper to taste

For the sauce:

  • 1/4 cup of tamari or light soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of hoisin sauce
  • 1 tablespoon of cornstarch
  • 1/2 cup of low-sodium chicken stock

Instructions:

  1. Prepare the Asian-style noodles as per the instructions on the package, then drain and set aside.
  2. Heat the canola oil in a large frying pan or wok over medium-high heat. Add the chicken, season with salt and pepper, and stir-fry until it’s golden brown and fully cooked. Remove the chicken from the pan and set it aside.
  3. In the same pan, add the red bell pepper, carrots, onion, and garlic. Stir-fry until the vegetables soften.
  4. While the vegetables are cooking, whisk together the tamari or soy sauce, oyster sauce, hoisin sauce, cornstarch, and chicken stock in a bowl.
  5. Add the chicken back into the pan, followed by the cooked noodles and sauce. Toss everything together until it’s well combined and heated through.
  6. Serve immediately, garnished with a sprinkle of sesame seeds or a scattering of chopped scallions if you like.
