Ingredients:
- 2 boneless, skinless chicken breasts, cut into thin strips
- 2 cups of Asian-style noodles (like chow mein or lo mein)
- 1 red bell pepper, sliced into thin strips
- 2 carrots, julienned
- 1 onion, finely sliced
- 2 cloves garlic, finely chopped
- 2 tablespoons of canola oil
- Salt and freshly ground black pepper to taste
For the sauce:
- 1/4 cup of tamari or light soy sauce
- 2 tablespoons of oyster sauce
- 1 tablespoon of hoisin sauce
- 1 tablespoon of cornstarch
- 1/2 cup of low-sodium chicken stock
Instructions:
- Prepare the Asian-style noodles as per the instructions on the package, then drain and set aside.
- Heat the canola oil in a large frying pan or wok over medium-high heat. Add the chicken, season with salt and pepper, and stir-fry until it’s golden brown and fully cooked. Remove the chicken from the pan and set it aside.
- In the same pan, add the red bell pepper, carrots, onion, and garlic. Stir-fry until the vegetables soften.
- While the vegetables are cooking, whisk together the tamari or soy sauce, oyster sauce, hoisin sauce, cornstarch, and chicken stock in a bowl.
- Add the chicken back into the pan, followed by the cooked noodles and sauce. Toss everything together until it’s well combined and heated through.
- Serve immediately, garnished with a sprinkle of sesame seeds or a scattering of chopped scallions if you like.
