Sizzling Pork Skewers

  • 1.5 pounds of pork loin, cut into 1-inch cubes
  • 4 ripe plums, pitted and quartered
  • 1 cup of couscous
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of pure honey
  • 2 cloves of garlic, finely chopped
  • Salt and black pepper to taste
  • Fresh mint sprigs for garnish

For the marinade:

  • 1/4 cup of tamari sauce
  • 1/4 cup of raw honey
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of finely chopped garlic
  • 1 teaspoon of freshly grated ginger


  1. Combine all the marinade ingredients in a bowl. Add the cubed pork, ensuring each piece is well coated. Cover and let it marinate in the refrigerator for a minimum of 2 hours, ideally overnight.
  2. Preheat your barbecue to a medium-high heat setting. Skewer the marinated pork cubes and plum quarters in an alternating pattern.
  3. In a separate bowl, whisk together the extra virgin olive oil, pure honey, finely chopped garlic, salt, and black pepper. Use this to glaze the skewers.
  4. Grill the skewers for about 10-15 minutes, rotating them occasionally until the pork is thoroughly cooked and the plums are soft.
  5. Concurrently, cook the couscous as per the instructions on the package.
  6. Serve the sizzling pork and charred plum skewers on a mound of light couscous. Embellish with fresh mint sprigs.
