Recipe for Beef Pot Roast:

Ingredients:

  • 3-4 lbs beef chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 4 carrots, peeled and cut into large chunks
  • 4 potatoes, peeled and cut into large chunks
  • 4 cups beef broth
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme

Instructions:

  1. Season the beef chuck roast with salt and pepper on all sides.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the beef and sear on all sides until browned. Remove the beef from the pot and set aside.
  3. In the same pot, add the onion and garlic, and cook until softened.
