  • 1 whole turkey (12-14 lbs), fully thawed and giblets removed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • 2 large onions, cut into wedges
  • 4 cloves of garlic, whole and peeled
  • 1 heat-resistant cooking bag, suitable for roasting


  1. Preheat your oven to 350°F (175°C).
  2. Wash the turkey under cold running water and pat dry with paper towels.
  3. In a small bowl, combine sea salt, freshly ground black pepper, dried oregano, dried basil, and dried parsley.
  4. Coat the turkey with extra virgin olive oil, ensuring an even application. Next, massage the herb mixture onto the turkey, covering both the exterior and interior cavities.
  5. Fill the turkey cavity with onion wedges and whole garlic cloves.
