Preparation Time: 30 minutes

Recipe for Spicy Warm Chicken Salad:

  1. 2 boneless, skinless chicken breasts
  2. 1 tablespoon olive oil
  3. Salt and pepper to taste
  4. 1 red bell pepper, sliced
  5. 1 cup cherry tomatoes, halved
  6. 4 cups mixed salad greens
  7. 1 jalapeno, seeded and sliced

For the Spicy Dressing:

  1. 2 tablespoons red wine vinegar
  2. 2 tablespoons olive oil
  3. 1 tablespoon honey
  4. 1/2 teaspoon crushed red pepper flakes
  5. Salt and pepper to taste

  1. Heat the olive oil in a pan over medium heat. Season the chicken breasts with salt and pepper and cook until golden and no longer pink in the middle, about 6-7 minutes per side. Remove from the pan and set aside to rest.
  2. In the same pan, add the bell pepper and cook until soft. Add the cherry tomatoes and cook for another 2 minutes.
  3. In a small bowl, combine all the ingredients for the spicy dressing and whisk until well combined.
  4. Slice the cooked chicken and arrange it on a bed of mixed salad greens. Top with the cooked peppers, tomatoes, and sliced jalapenos.
  5. Drizzle the spicy dressing over the top of the salad just before serving. Enjoy your Spicy Warm Chicken Salad warm and fresh!
