Spicy Herb Chicken Pasta Recipe:

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon of chili flakes
  • 1 tablespoon of mixed herbs (thyme, rosemary, oregano)
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 cup of cherry tomatoes, halved
  • 2 cups of penne pasta
  • Salt and pepper to taste
  • 1/2 cup of grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions:

  1. Start by marinating the chicken breasts with chili flakes, mixed herbs, salt, and pepper. Set aside for 15 minutes.
  2. In a large pot, bring salted water to a boil. Add the penne pasta and cook until al dente, according to the package instructions. Drain and set aside.
  3. Heat olive oil in a pan over medium heat. Add the marinated chicken breasts and cook until golden and fully cooked. Remove from the pan and set aside.
  4. In the same pan, add more oil if needed, then add the garlic, onion, and bell pepper. Sauté until softened.
  5. Add the cherry tomatoes to the pan and cook until they start to soften and burst.
  6. Cut the cooked chicken into slices and return it to the pan. Stir to combine.
  7. Add the cooked pasta to the pan and toss everything together. Adjust seasoning if necessary.
