  1. 4 whole fresh artichokes
  2. 4 cloves of garlic
  3. 2 zesty lemons
  4. 4 tablespoons of extra virgin olive oil
  5. Salt and freshly ground pepper to taste


  1. Warm your oven to 425°F (220°C).
  2. Clean the artichokes thoroughly under running water, level the stems for stability, remove an inch from the top, and snip the prickly tips of the leaves.
  3. Halve a lemon and gently rub the exposed parts of the artichokes to prevent discoloration.
