Recipe: Roasted Garlic and Herb Pork Tenderloin

  • 1 pork tenderloin (1-1.5 lbs / 450-680 g)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, thyme, and parsley. Mix well to create an herb mixture.
  3. Lay the pork tenderloin on a cutting board and trim any excess fat or silver skin. Pat the tenderloin dry with paper towels to remove any excess moisture.
  4. Season the pork tenderloin evenly with kosher salt and freshly ground black pepper.
  5. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until it develops a nice brown crust, about 2-3 minutes per side.
  6. Remove the skillet from heat. Allow the pork to cool slightly for a couple of minutes.
  7. Brush the entire surface of the pork tenderloin with Dijon mustard, making sure to coat it evenly.
  8. Press the herb mixture onto the mustard-coated pork tenderloin, ensuring the herbs adhere well to the mustard.
  9. Drizzle the remaining 1 tablespoon of olive oil over the herb-crusted pork tenderloin.
  10. Transfer the skillet to the preheated oven and roast for 18-20 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  11. Remove the skillet from the oven and let the pork tenderloin rest for at least 5-10 minutes. This allows the juices to redistribute and keep the meat tender.
  12. Slice the pork tenderloin into 1/2-inch (1.25 cm) thick medallions and serve with your choice of sides.
