  1. 2 medium celeriac, peeled and cubed
  2. 2 tablespoons olive oil
  3. Salt and pepper to taste
  4. 1 onion, chopped
  5. 2 cloves garlic, minced
  6. 4 cups vegetable broth
  7. 1 teaspoon thyme leaves
  8. 1 cup heavy cream


  1. Preheat the oven to 400°F (200°C). Toss the celeriac cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30 minutes or until golden and caramelized.
  2. In a large pot, sauté the onion and garlic until softened.
