Recipe: Rice and Bean Bowl Dinner

  • 1 cup brown rice
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish


  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, bring the water to a boil. Add the rice, reduce heat to low, cover and simmer for about 45 minutes, or until the rice is tender and water has been absorbed.
  3. While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  4. Add the beans, corn, cumin, salt, and pepper to the skillet. Cook for 10-15 minutes, stirring occasionally until heated through.
  5. Divide the cooked rice between four bowls. Top each bowl with the bean and corn mixture.
  6. Garnish with fresh cilantro and serve with a lime wedge.
