  • 1 lb (450 g) smoked sausage, sliced into 1/4-inch (0.6 cm) rounds
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small zucchini, chopped
  • 1 small yellow squash, chopped
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.
