Ingredients:

  • 2 cups cooked white rice
  • 8 ounces pork, diced
  • 1 cup mixed vegetables (carrots, peas, onions)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the diced pork and cook until browned and cooked through. Remove the pork from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the minced garlic until fragrant.
  4. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are tender-crisp.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  6. Add the cooked rice and cooked pork back to the skillet, along with the soy sauce. Stir-fry everything together for a few minutes until well combined.
  7. Season with salt and pepper to taste.
  8. Remove from heat and garnish with chopped green onions if desired.
