Serves: 4

  • 8 ounces of pasta (linguine or spaghetti)
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 cup of fresh basil leaves
  • 2 cloves of garlic
  • 1/4 cup of pine nuts
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of extra-virgin olive oil
  • Salt and pepper to taste

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a food processor, combine the basil, garlic, pine nuts, and Parmesan cheese. Pulse until coarsely chopped.
  3. With the food processor running, slowly add the olive oil until a smooth pesto sauce forms. Season with salt and pepper to taste.
  4. Heat a skillet over medium-high heat and add a drizzle of olive oil. Cook the chicken slices until they are golden brown and cooked through.
  5. Add the cooked pasta to the skillet with the chicken. Pour the pesto sauce over the pasta and chicken, and toss until everything is well coated.
  6. Serve the Pesto Pasta with Chicken hot, garnished with additional Parmesan cheese and fresh basil leaves if desired.
