Preparation Time: 30 minutes

Cooking Time: 20 minutes

Total Time: 50 minutes

Serving Size: 4

  • 8 ounces thin rice noodles (Pancit Bihon)
  • 2 tablespoons cooking oil
  • 3 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 boneless chicken breasts, thinly sliced
  • 1 cup shrimp, peeled and deveined
  • 1 cup sliced carrots
  • 1 cup sliced cabbage
  • 1 cup green beans, cut into 2-inch pieces
  • 1 cup sliced bell peppers (red and green)
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon fish sauce (optional)
  • Salt and pepper to taste
  • Sliced green onions for garnish
  • Calamansi or lemon wedges for serving

  1. Soak the rice noodles in warm water for about 10 minutes or until they become soft. Drain and set aside.
  2. In a large pan or wok, heat the cooking oil over medium heat. Add the minced garlic and sliced onions, and sauté until fragrant and translucent.
  3. Add the sliced chicken and cook until it turns white and is no longer pink. Add the shrimp and cook until they turn pink and are cooked through.
  4. Add the sliced carrots, cabbage, green beans, and bell peppers. Stir-fry for about 3-4 minutes or until the vegetables are crisp-tender.
  5. Push the ingredients to one side of the pan and add the soaked rice noodles. Pour the soy sauce, oyster sauce, and fish sauce (if using) over the noodles. Mix everything together until the noodles are well coated with the sauces and the ingredients are evenly distributed.
  6. Season with salt and pepper to taste. Stir-fry for another 3-4 minutes or until the noodles are heated through.
  7. Remove from heat and garnish with sliced green onions.
  8. Serve hot with calamansi or lemon wedges on the side.
