  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 can diced tomatoes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, minced (optional)
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced


  1. In a large skillet, sauté onions, bell peppers, jalapeno, and garlic until slightly softened.
  2. Add quinoa, vegetable broth, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Stir to combine.
