Servings: 4

  1. 4 bone-in chicken thighs
  2. 1 cup yellow rice
  3. 2 cups chicken broth
  4. 1 medium onion, finely chopped
  5. 1 bell pepper, diced
  6. 2 cloves of garlic, minced
  7. 1 teaspoon turmeric
  8. 1 teaspoon paprika
  9. 2 tablespoons olive oil
  10. Salt and pepper to taste

  1. Heat the olive oil in a large pot over medium heat. Season the chicken thighs with salt, pepper, and paprika. Add to the pot and cook until browned on all sides. Remove the chicken and set aside.
  2. In the same pot, add the onion, bell pepper, and garlic. Cook until softened.
  3. Stir in the yellow rice, ensuring it’s well-coated with the oil and veggies.
  4. Add the turmeric, and stir until the rice is evenly colored.
  5. Return the chicken to the pot, add the chicken broth, and bring to a boil.
  6. Reduce heat to a simmer, cover the pot, and let it cook for about 30 minutes, or until the rice is cooked and the chicken is tender.
