One-Pot Ground Turkey Pasta Recipe:

Preparation Time: 30 minutes

  • 1 lb lean ground turkey
  • 2 cups whole wheat pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Sauté until the vegetables are soft, around 5 minutes.
  2. Add the ground turkey to the pot. Cook until browned, breaking it up as it cooks.
  3. Stir in the diced tomatoes, chicken broth, pasta, oregano, and basil. Season with salt and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer until the pasta is cooked about 15 minutes.
  5. Remove from heat and sprinkle the shredded mozzarella on top. Cover the pot again and let it sit for a few minutes until the cheese melts.
