Recipe For Mexican Chicken and Rice Bowls

  1. 1 lb boneless, skinless chicken breasts, cut into strips
  2. 1 cup long-grain white rice, rinsed
  3. 2 cups low-sodium chicken broth
  4. 1 can black beans, rinsed and drained
  5. 1 cup corn kernels
  6. 1 cup salsa
  7. 1 tsp chili powder
  8. 1 tsp cumin
  9. Salt and pepper to taste
  10. 2 tablespoons olive oil
  11. Fresh cilantro, diced avocado, and lime wedges for garnish


  1. Turn on your Instant Pot and set it to the sauté function. Add olive oil, then add the chicken. Cook until browned on all sides. Remove and set aside.
  2. Add the rice to the pot and stir well, making sure to pick up any browned bits from the bottom of the pot.
  3. Add the chicken broth, followed by the cooked chicken, salsa, beans, corn, chili powder, and cumin. Stir to combine.
  4. Close the lid and set the Instant Pot to the ‘Pressure Cook’ function. Cook for 10 minutes.
  5. Once done, allow the pressure to release naturally for 10 minutes, then do a quick release.
  6. Stir the mixture, taste, and add salt and pepper as needed.
  7. Serve in bowls, topped with fresh cilantro and diced avocado. Add a lime wedge to each bowl for squeezing.
