Recipe for Loaded Breakfast Skillet

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Total Time: 40 minutes

  • 1 lb of diced potatoes
  • 4 slices of bacon, cut into small pieces
  • 4 sausage links, cut into small pieces
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 4 eggs
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Chopped fresh herbs (parsley or chives) for garnish

  1. Heat a large skillet over medium heat and add the diced bacon and sausage. Cook until crisp and brown, then remove with a slotted spoon and set aside.
  2. In the same skillet, add the diced potatoes, bell pepper, and onion. Cook in the remaining fat until the potatoes are golden brown and the vegetables are soft. Season with salt and pepper.
  3. Make four wells in the potato mixture and crack an egg into each well. Cover the skillet and let the eggs cook until they reach your desired level of doneness.
  4. Sprinkle the cooked bacon, sausage, and shredded cheese over the top of the eggs and potatoes. Cover the skillet again for a minute or two until the cheese is melted.
  5. Garnish with fresh herbs, add additional salt and pepper if needed, and serve directly from the skillet.
