Recipe for Loaded Breakfast Skillet

Ingredients:

  • 1 lb of diced potatoes
  • 4 slices of bacon, cut into small pieces
  • 4 sausage links, cut into small pieces
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 4 eggs
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Chopped fresh herbs (parsley or chives) for garnish

Instructions:

  1. Heat a large skillet over medium heat and add the diced bacon and sausage. Cook until crisp and brown, then remove with a slotted spoon and set aside.
  2. In the same skillet, add the diced potatoes, bell pepper, and onion. Cook in the remaining fat until the potatoes are golden brown and the vegetables are soft. Season with salt and pepper.
