  • 2 bell peppers (any color), sliced into strips

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste


  1. In a large skillet over medium-high heat, add 1 tablespoon of olive oil and sauté the sliced kielbasa sausage until browned about 5-7 minutes. Remove the sausage from the skillet and set it aside on a plate.
  2. In the same skillet, add the remaining tablespoon of olive oil and sauté the onions and garlic until fragrant, about 2-3 minutes.
  3. Add the sliced bell peppers to the skillet and cook until they begin to soften, about 5-7 minutes.
  4. Add the diced potatoes to the skillet and stir everything together.
