  • 1 cup long-grain rice
  • 1 can (14oz) coconut milk
  • 1 can (15oz) red kidney beans, drained and rinsed
  • 3 cups water
  • 1 whole Scotch bonnet pepper (optional)
  • 1 teaspoon salt
  • 2 garlic cloves, minced
  • 2 green onions, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper


  1. Rinse rice under cold water until water runs clear. Drain.
  2. In a large pot, combine coconut milk, water, red kidney beans, garlic, and salt. Bring to a boil.
