Total Time: 50 minutes

Yield: 4 servings

Ingredients:

  • 1 lb lean ground beef (450g)
  • 1 small cabbage, thinly sliced (around 4 cups)
  • 1 medium-sized onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon cooking oil
  • 1/4 cup tamari or low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon red chili flakes (optional)
  • Salt and black pepper, to taste
  • 2 scallions, chopped (for garnish)

Instructions:

  1. Combine tamari or soy sauce, apple cider vinegar, powdered ginger, and red chili flakes (if using) in a small bowl. Mix well and set aside.
  2. In a large frying pan or wok, heat the cooking oil over medium-high heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until the onion starts to become tender.
  3. Incorporate the ground beef into the pan, breaking it apart with a spatula while it cooks. Cook for 5-7 minutes or until the beef is browned and thoroughly cooked. Remove any excess grease.
  4. Add the thinly sliced cabbage to the pan and cook for an additional 5-7 minutes or until the cabbage softens.
  5. Pour the prepared tamari or soy sauce mixture over the beef and cabbage, stirring to combine. Season with salt and black pepper as desired.
  6. Cook for another 2-3 minutes, allowing the flavors to blend.
  7. Take the pan off the heat and top with chopped scallions before serving.
