Recipe for Olive Oil, Tomato, and Basil Pasta

Preparation Time: 20 minutes


  • 200 grams of spaghetti
  • 2 tablespoons of extra-virgin olive oil
  • 4 ripe tomatoes, diced
  • 3 cloves of garlic, minced
  • A handful of fresh basil leaves, torn
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)


  1. Cook the spaghetti according to the package instructions until al dente. Drain, reserving 1/2 cup of the pasta water.
  2. Meanwhile, in a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, around 1 minute.
  3. Add the diced tomatoes to the pan and cook for about 5 minutes, or until they soften and release their juices.
  4. Add the cooked spaghetti to the pan. Toss well to combine, adding the reserved pasta water if needed to loosen the sauce.
  5. Season with salt and pepper to taste, then stir in the fresh basil leaves.
