Chili-Topped Potato Soup Recipe:

Preparation time: 15 minutes

Cooking time: 30 minutes

Total time: 45 minutes

Serves: 6

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 4 large potatoes, peeled and diced
  5. 4 cups vegetable broth
  6. 1 cup heavy cream
  7. Salt and pepper to taste
  8. 2 cups homemade or store-bought chili
  9. Shredded cheddar cheese and chopped green onions for garnish

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.
  2. Add the diced potatoes and vegetable broth, and bring the mixture to a boil.
  3. Reduce the heat and simmer for about 20 minutes, or until the potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a standard blender to puree, then return it to the pot.
  5. Stir in the heavy cream, season with salt and pepper.
  6. Warm the chili in a separate pot or in the microwave.
  7. To serve, ladle the soup into bowls, top with a generous spoonful of warm chili, and garnish with shredded cheddar cheese and green onions.
