Preparation time: 15 minutes

Cooking time: 25 minutes

Total time: 40 minutes Serves: 4

Ingredients:

For the Soup:

  1. 1 tablespoon olive oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 2 boneless chicken breasts, diced
  5. 4 cups chicken broth
  6. 2 packs ramen noodles (seasoning discarded)
  7. Salt and pepper to taste
  8. 2 green onions, sliced
  9. 1 boiled egg, halved (optional)

For the Crackers:

  1. 1 cup whole wheat crackers
  2. 2 tablespoons honey
  3. 1 tablespoon sriracha

Instructions:

  1. Start by heating the olive oil in a pot over medium heat. Add the onion, garlic, and chicken, sautéing until the chicken is cooked through.
  2. Pour in the chicken broth and bring to a boil. Add the ramen noodles and simmer until they’re soft, which takes about 5 minutes.
  3. Season with salt and pepper, then remove the pot from the heat.
  4. For the crackers, preheat your oven to 350°F (175°C). In a bowl, combine the honey and sriracha. Toss the crackers in this mixture until they’re fully coated.
  5. Spread the crackers on a baking sheet lined with parchment paper, and bake for 10 minutes or until they’re golden brown and crispy. Allow them to cool.
  6. Ladle the soup into bowls, garnish with green onions, a boiled egg half, and a handful of honey sriracha crackers.
