Preparation Time: 30 minutes

Cooking Time: 15 minutes

Total Time: 45 minutes

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • ½ cup chicken broth
  • ¼ cup fresh lemon juice
  • ¼ cup brined capers drained
  • ¼ cup fresh parsley, chopped

  1. Start by pounding the chicken breasts to an even thickness. Season them with salt and pepper.
  2. Dredge the chicken breasts in flour, shaking off any excess.
  3. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  4. Add the chicken breasts to the skillet and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  5. In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a boil and scrape off any browned bits from the bottom of the skillet.
  6. Reduce the heat to low and stir in the remaining butter until melted and the sauce thickens slightly.
  7. Return the chicken breasts to the skillet and simmer for an additional 2-3 minutes until heated through.
  8. Sprinkle fresh parsley on top and serve hot.
