Chicken Marsala Recipe

Recipe for Chicken Marsala

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/4 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a shallow dish, mix the flour, salt, and pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, melt 2 tablespoons of butter with 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the remaining butter and olive oil. Add the mushrooms and garlic, and sauté until the mushrooms are golden brown and tender.
  4. Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to deglaze. Bring the mixture to a simmer and let it cook for about 5 minutes to reduce slightly.
  5. Return the chicken breasts to the skillet and simmer in the sauce for an additional 10 minutes or until the chicken is cooked through.
  6. Stir in the heavy cream and cook for an additional 2 minutes to thicken the sauce. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve hot with your choice of side dishes.
