  • 2 boneless, skinless chicken breasts
  • 2 cups of cooked jasmine rice
  • 1 cup of mixed vegetables (carrots, peas, and corn)
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 2 eggs, beaten
  • 2 tablespoons of soy sauce
  • Salt and pepper to taste
  • 2 green onions, chopped


  1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the chicken breasts, season with salt and pepper, and cook until no longer pink in the middle. Remove from the pan and set aside.
  2. In the same pan, add the remaining oil and minced garlic. Sauté until the garlic is golden brown.
