Chicken Al Pastor Recipe:

Preparation Time: 20 minutes (plus 2 hours of marinating time)

Cook Time: 20 minutes

Serving: 4

  • 4 boneless, skinless chicken breasts
  • 3 guajillo chilies, seeds removed
  • 1 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

  1. Soak the guajillo chilies in hot water until softened, about 10 minutes. Drain and set aside.
  2. In a blender, combine the softened chilies, pineapple juice, garlic, oregano, cumin, vinegar, salt, and pepper. Blend until smooth.
  3. Pour the marinade over the chicken breasts, ensuring they are well coated. Marinate for at least 2 hours, or overnight if time permits.
  4. Preheat the grill to medium-high heat and oil the grates. Remove the chicken from the marinade and pat dry.
  5. Grill the chicken for about 7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. Allow the chicken to rest for a few minutes before serving.
