Braised Beef Cheeks Recipe:

Ingredients:

  1. 4 beef cheeks (about 1 kg)
  2. 2 tablespoons olive oil
  3. 1 large onion, diced
  4. 2 carrots, diced
  5. 2 celery stalks, diced
  6. 4 cloves garlic, minced
  7. 1 bottle of red wine
  8. 2 cups beef stock
  9. 4 sprigs of fresh thyme
  10. 2 bay leaves
  11. Salt and pepper to taste

Instructions:

  1. Preheat your oven to 150°C (300°F).
  2. Season the beef cheeks with salt and pepper. Heat the olive oil in a large oven-proof pot and sear the beef cheeks until browned on each side. Remove and set aside.
  3. In the same pot, add the onions, carrots, celery, and garlic. Cook until softened.
  4. Deglaze the pot with the red wine, scraping up any browned bits from the bottom. Reduce the wine by half.
  5. Return the beef cheeks to the pot, and add the beef stock, thyme, and bay leaves. Bring to a simmer.
  6. Cover the pot and transfer it to the oven. Braise for 3-4 hours until the beef cheeks are tender and the sauce is rich.
  7. Remove the bay leaves and thyme sprigs. Season with additional salt and pepper if needed.
